The Custom Cut Process: Simple, Guided, and Tailored to You
We Welcome Your Input: This is your custom order. We strongly encourage you to provide detailed instructions on how you’d like your beef cut. Once your order is placed, we will provide you with a detailed cut sheet to fill out, and we are happy to guide you through the options to ensure you get the steaks, roasts, and ground meat you’re looking for. While we will do our absolute best to accommodate every request, please understand that final cuts are dependent on the specific animal.
Securing Your Order: To reserve your half beef, we require a $550 deposit.
Confirmation & Final Balance: After your order and deposit are received, we will contact you to confirm the details. Once your beef has been processed and weighed, we will provide you with the final invoice for the remaining balance.
Understanding Your Half Beef Order
Transparency is key to a Fair partnership. Here’s exactly what to expect:
Hanging Weight vs. Take-Home Weight: Your final price is based on the “hanging weight” of the animal, which is the industry standard. This is the weight after initial processing but before dry-aging and butchering. You can typically expect the final “take-home” weight of the packaged meat to be approximately 60% of the hanging weight.
The Beauty of Custom Butchery: Every cow is different. The sample cut list below is a approximate guide, but it is not a guarantee. The exact number and size of cuts will vary slightly based on the individual animal and your specific cutting instructions. Rest assured, you will always receive the full value and weight of your order.
Bones are Included: Your take-home weight includes not just the steaks, roasts, and ground meat, but also the valuable, nutrient-rich soup bones, which are perfect for making incredible homemade stocks and broths.
Our All-Inclusive, Transparent Pricing
Our “no surprises” pricing philosophy is central to our Fair promise.
No Hidden Fees: Our price per pound includes all standard cutting and professional, vacuum-sealed wrapping fees.
Price Breakdown:
Price: $8.49 per pound (based on hanging weight)
Approximate Hanging Weight: ~450 lbs
Approximate Take-Home Weight: ~270 lbs
Example Final Cost: ~ $3,820.50
Deposit Policy: The $550 deposit is partially refundable. In the case of an order cancellation, a $100 processing fee will be retained.
Delivery & Pickup: A $50 bulk delivery fee will be applied to your final invoice. This fee is waived if you choose to pick up your order directly from our depot.
Custom Portioning Fee: For portioning requests that go beyond our standard packages, a $20 fee per adjustment applies. This covers the extra handling required and ensures fairness and consistency across all orders.
